Apple Tarts

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Peel, quarter, core, and boil the apples in ½ cup of water until soft.

  2. Mash the apples until smooth.

  3. Add the egg yolks, lemon juice, lemon rind, butter, and sugar; mix thoroughly.

Assemble and bake

  1. Line patty pans with puff pastry and fill with the apple mixture.

  2. Bake in a hot oven (400°F / 200°C) for 5 minutes.

Top and brown

  1. For meringue, beat the whites of 3 eggs with 3 tablespoons of sugar until stiff.

  2. Spread the meringue over the tarts and return to the oven to brown lightly.

What each ingredient does

Tart apples
Cook down to a soft, smooth base that gives the filling its body and flavor.
Egg yolks
Thicken the apple mixture as they set and add richness to the filling.
Butter
Adds fat for richness and a smoother, softer texture in the filling.
Sugar
Sweetens the filling and balances the tartness of the apples and lemon.
Lemon juice and rind
Add acidity and bright aroma that cut through the sweetness of the filling.
Puff pastry
Forms the flaky crust that holds the apple filling in each tart.

The step that matters

Mashing and mixing the filling before baking. Egg yolks thicken when heated, so the apple mixture must be smooth and evenly blended with the yolks, butter and sugar. Lumps or unmixed yolk can leave the filling uneven or set in patches.

Swap the apple

How well each one fits the dish's main ingredients (egg, lemon, butter, sugar):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against egg, lemon, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
