Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and fruit body of the sponge.
Gelatine
Sets the liquid mixture so it holds its shape when chilled.
Egg whites
Whipped to foam, they give the sponge its light, airy texture.
Sugar
Sweetens the dish and helps stabilise the syrup and foam.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Beat until the mixture begins to thicken. Whipping the egg whites and gelatine mixture while it is cool but still fluid traps air, creating the sponge's light texture. If it is beaten after it sets, or not cooled enough, the foam will be dense or collapse.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
