Tutti Frutti Ice Cream

Ingredients

Directions

Make the base

  1. In a large bowl, mix the cream, powdered sugar, and eggs until well combined.

  2. Heat the mixture in a saucepan over medium heat, stirring constantly, until it just reaches boiling point.

  3. Remove from heat and continue stirring until nearly cool.

  4. Stir in the vanilla extract.

Freeze and add fruit

  1. Pour the mixture into an ice cream freezer and freeze until half frozen.

  2. Add the preserved fruits and mix thoroughly into the ice cream.

  3. If desired, for a marbled effect, dissolve carmine in water and mix in with spirits of ammonia before molding.

What each ingredient does

Eggs
Egg yolks thicken the cream base and add richness to the custard-style mixture.
Rich cream
Provides fat that gives the ice cream a smooth, rich texture.
Powdered sugar
Sweetens the base and softens the texture by lowering the freezing point.
Preserved fruits
Add concentrated fruit flavor and chewy pieces throughout the frozen cream.

The step that matters

Heating the mixture to just boiling. Heating the egg-and-cream mixture gently while stirring constantly keeps the eggs from scrambling. Overheating can curdle the eggs and leave a grainy texture.

Swap the pineapple
