Delmonico Pudding

Ingredients

Directions

Make the custard

  1. In a bowl, beat the egg yolks until light, then add the sugar and beat until very light.

  2. Mix the cornstarch with a little cold milk, then combine with the egg mixture.

  3. Stir this mixture into 1 quart of milk just before it boils, adding a little salt.

  4. Stir until the mixture thickens well, then pour it into a serving dish.

  5. Place the dish in the oven until it can bear icing.

Top and bake

  1. Top with a layer of canned peaches or other fruit, mixing the fruit syrup with the custard if desired.

  2. In a separate bowl, beat the egg whites to a stiff froth with 2 tablespoons of sugar per egg.

  3. Spread the beaten egg whites over the pudding and bake until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and add richness and colour to the base.
Cornstarch
Thickens the milk mixture so the custard sets smoothly when stirred.
Milk
Forms the liquid base of the custard that thickens with the starch and yolks.
Egg whites
Whipped with sugar to form a stiff topping that bakes to a light brown crust.
Sugar
Sweetens the custard and stabilises the whipped egg white topping.

The step that matters

Stir the cornstarch mixture into the milk just before it boils. Starch thickens only when heated enough and stirred constantly; adding it too early or stopping stirring can leave lumps or a thin custard.
