Strawberry Jam

Ingredients

Directions

Make the jam

  1. Combine strawberries and sugar in a preserving pan, stirring gently to avoid breaking the fruit.

  2. Simmer the mixture for 30 minutes.

  3. Transfer the jam into airtight pots.

Seal the pots

  1. Cut round covers from writing paper.

  2. Smear the inside of the covers with egg white.

  3. Optionally, dip a circular paper in brandy and place it over the jam before sealing to prevent dampness.

  4. Tie the covers over the pots with a cord.

What each ingredient does

Strawberries
Provide the fruit, flavour and the pectin-bearing body of the jam.
Sugar
Sweetens the jam and helps it set and keep longer.
Egg white
Acts as a glue to stick the paper covers to the pots.

The step that matters

Stirring gently when combining strawberries and sugar. Stirring gently keeps the fruit from breaking down too early, so the jam keeps pieces of fruit instead of turning to mush. Sugar drawn out of the fruit also needs even dissolving before simmering to avoid scorching on the pan base.
