What each ingredient does

Anchovies
Provide a salty, savoury flavour and are rolled up as a garnish.
Herring
Adds a rich, savoury fish flavour and firm pieces to the salad.
Cold boiled potatoes
Make up the bulk of the salad and soak up dressing, giving body.
Beet-roots
Add sweetness, colour and an earthy flavour.
Oil
Carries flavour and gives the dressing a smooth, rich body.
Tarragon vinegar
Adds acidity that brightens the dressing and cuts the richness of the fish and meat.

The step that matters

Dressing the salad. Oil and vinegar separate unless beaten together well, and mustard helps emulsify them. Pour the dressing over while the diced potatoes are still cool and fully mixed so the flavour spreads evenly rather than pooling at the bottom of the bowl.

Swap the potato

How well each one fits the dish's main ingredients (ham, veal, cucumber, capers, egg, olive, tarragon):

  1. Shallotfits better
  2. Lettucefits better
  3. Chivefits better
  4. Potatothe original
