What each ingredient does

Cauliflower
Forms the crisp, firm pickled body that holds the brine.
Hot vinegar
Provides the acidity that preserves and sharpens the pickled flavour.
White sugar
Balances the sharpness of the vinegar with sweetness.
French mustard
Adds sharp, tangy flavour and helps emulsify the brine.

The step that matters

Covering the cauliflower fully with hot vinegar. Pieces left above the liquid can spoil or discolour, because the acidic brine is what keeps the vegetable preserved. Make sure every piece is submerged before sealing.
