Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma, and helps keep the starter from spoiling.
Brown sugar
Feeds the yeast, fuelling fermentation and adding a little sweetness.
Flour
Provides starch and body, giving the yeast material to work on.
Potatoes
Supply extra starch that the yeast can ferment, adding body to the mixture.

The step that matters

Cool the liquid before adding the yeast base. Yeast is killed by heat, so the hop liquid must cool to a warm but not hot temperature before the sugar and flour are mixed in. Adding it while still hot can stop fermentation before it starts.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
