Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt mackerel
The main fish; soaking in fresh water draws out much of its surface salt.
Flour
A light coating that helps the fish brown and crisp in the hot pan.
Butter
Fat for frying that promotes browning, and extra richness when poured over at serving.

The step that matters

Changing the soaking water. Salt moves out of the fish into the water until the two levels even out. Fresh water keeps that gradient going, so the fish loses more salt. Stale water slows the process and leaves the fish saltier.

Swap the parsley

How well each one fits the dish's main ingredients (flour, butter):

  1. Jalapenofits better
  2. Capersfits better
  3. Nutmegfits better
  4. Parsleythe original

Fit is the average pairing score against flour, butter. Candidates are from the same food group and used in at least 100 recipes.
