Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the savory flavor and bulk of the balls.
Potatoes
Mashed starch that binds the mixture and gives the balls a soft interior.
Egg
Binds the mashed mixture so the balls hold their shape while frying.
Cream or rich milk
Adds moisture and richness, keeping the mash soft and tender.
Butter
Adds fat for flavor and helps the outside brown in the pan.

The step that matters

Fry the balls until they are a nice brown. Browning depends on the pan being hot before the balls go in. Lard and butter fry at high heat, and frying in a cool pan lets the balls absorb fat and soften instead of forming a crisp, golden crust.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, cream):

  1. Leekfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
