Boston Oyster Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the crust

  1. Butter the inside of a deep pie plate and line it with puff pastry or common pie crust.

  2. Prepare another sheet of pastry for the lid.

  3. Place a clean towel in the dish to support the lid, then bake the pastry in a 400°F (200°C) oven until done.

  4. Remove the lid and take out the towel.

Cook the oysters

  1. Pick off any shell bits from the oysters and drain the liquor into a pan.

  2. In a stewpan, add the oysters with just enough liquor to prevent burning.

  3. Season with pepper, coarse sea salt, and butter, then add a little sweet cream or milk and the rolled crackers.

  4. Simmer the oysters gently, avoiding boiling.

Assemble and serve

  1. Fill the baked pie crust with the oysters and gravy, replace the lid, and serve hot.

What each ingredient does

Oysters
Provide the main filling and the briny flavour of the pie.
Butter
Adds richness and fat, giving the filling a smooth, savoury finish.
Sweet cream or milk
Adds moisture and body, turning the oyster liquor into a creamy gravy.
2 crackers, rolled fine
Crumbs thicken the liquid and help bind the filling into a gravy.
Puff pastry or common pie crust
Forms the structure that holds the filling, baking into a crisp shell.

The step that matters

Simmer the oysters gently, avoiding boiling. Oysters toughen and shrink quickly when boiled. Gentle heat keeps them tender and juicy while the cream and crackers thicken the gravy.
