Ingredients

Directions

Prepare

  1. Trim off inedible parts of the mutton and wash it well.

  2. Dry the meat with a clean cloth and place it in a roasting pan.

  3. Add a little water to the pan for basting initially.

Roast

  1. Roast for about 12 minutes per pound in a strong oven.

  2. Do not salt the meat at first; salt it after it begins to roast well.

  3. If browning too fast, cover with a sheet of white paper.

  4. Baste often, and about 15 minutes before done, lightly dredge with flour and baste with butter.

Finish the gravy

  1. Skim the gravy and thicken slightly with brown flour before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton (in the method)
Provides the meat that cooks through and browns in the roasting pan.
Butter
Adds fat that enriches the surface and helps it brown during basting.
Flour
Dredged over the meat and browned to form a crust, then thickens the gravy.

The step that matters

Salting timing. Salt added at the start can draw moisture out of the meat before it sets a crust. Waiting until the surface has begun to roast helps it brown well and keeps the juices in.

Swap the currant
