What each ingredient does

Potatoes
Form the bulk of the salad, absorbing the warm gravy and holding their shape when sliced thin.
Onions
Add sharp, pungent flavor that mellows slightly in the warm dressing.
Bacon
Supplies fat and smoky flavor, and its drippings become the base of the dressing.
Vinegar
Adds acidity that sours the bacon grease into a tangy gravy.

The step that matters

Pour the gravy while the potatoes are still hot. Warm potatoes absorb the vinegar-spiked bacon fat more readily, so the flavor distributes through the slices. Mix lightly so the thin slices do not break apart.

Swap the potato

How well each one fits the dish's main ingredients (onion, vinegar):

  1. Mustardfits better
  2. Cucumberfits better
  3. Radishfits better
  4. Potatothe original

Fit is the average pairing score against onion, vinegar. Candidates are from the same food group and used in at least 100 recipes.
