Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Boil the potatoes whole in plenty of salted water until just tender, then let them cool.

  2. Remove the skins and slice the potatoes into ¼‑inch thick slices.

  3. In a bowl, season the potatoes with salt and pepper, then chop them into small dice.

Warm and serve

  1. In a saucepan, melt the butter over medium heat, then add the milk and bring to a boil.

  2. Add the chopped potatoes to the boiling milk, stir gently to moisten, then cover.

  3. Place the saucepan on the back of the stove or in a 350°F (175°C) oven to heat through gradually.

  4. Once heated, stir gently from the bottom and cover tightly until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and starchy body, softening and absorbing the warm milk and butter.
Butter
Adds fat for richness and a smooth, silky mouthfeel.
Milk
Supplies the moisture and creaminess that the diced potatoes absorb as they warm.

The step that matters

Heating the potatoes in the milk gradually. Milk scorches easily on direct heat, and milk solids can stick to the pan bottom. Heating gently and stirring from the bottom keeps the milk from burning, while gentle stirring keeps the soft potato pieces from breaking down into a paste.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, egg, milk):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against pepper, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
