What each ingredient does

Cauliflower
Forms the main body of the dish, staying tender inside while the coating crisps outside.
Flour
Thickens the yolk mixture into a paste that clings to the cauliflower.
Egg yolks
Add richness and help bind the flour paste into a smooth coating.
Egg whites
Whipped to stiffness, they add lightness and air to the batter so it puffs when fried.

The step that matters

Folding the beaten egg whites. Fold gently so the foam stays intact. Stiff whites trap air that expands in hot fat, giving a light, puffy coating. Deflating them makes the batter heavy and greasy.

Swap the cauliflower
