Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, creamy body once set.
Isinglass or gelatin
Sets the liquid into a firm, sliceable structure as it cools.
Lemon juice
Adds acidity that brightens the sweetness of the dish.
Powdered sugar
Sweetens the mixture and dissolves easily into the cream.

The step that matters

Boil the isinglass or gelatin with the water until reduced by half. Gelatin must be fully dissolved and heated to work as a setting agent. Boiling concentrates it so it sets firmly. Adding it while still very hot or unevenly dissolved can leave lumps or a weak set.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar, white wine, gelatin):
