Dumplings and Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the egg whites with a little grated lemon rind until well mixed.

  3. Butter small cups and fill them more than halfway with the mixture.

  4. Bake for 20 to 30 minutes, depending on the size of the puddings.

  5. Serve with fruit, custard, or wine sauce poured over them.

  6. Alternatively, drop spoonfuls of the mixture onto buttered baking sheets and bake.
