Oatmeal Geuel

Ingredients

Directions

Make the gruel

  1. Combine 4 tablespoons of coarsely ground oatmeal with 1 pint of boiling water in a saucepan.

  2. Boil gently, stirring often, until it reaches your desired thickness.

  3. For fine oatmeal, sift it and mix with a little cold water to form a thick batter before adding to boiling water.

  4. Stir continuously while boiling, lifting the spoon gently and allowing the gruel to fall back into the pan.

Finish and serve

  1. Strain the mixture and add butter, wine, nutmeg, and salt while warm.

What each ingredient does

Oatmeal
Thickens the water as its starches swell and gelatinize during gentle boiling, forming the gruel's body.
Butter
Adds fat and richness, giving the warm gruel a smoother, silkier mouthfeel.
Wine
Adds acidity and aroma that brighten the mild, starchy oatmeal flavour.
Nutmeg
Adds warm, aromatic spice that complements the oats and butter.

The step that matters

Stir continuously while boiling. Oat starch settles and scorches on the pan bottom or forms lumps if left unstirred, so constant stirring keeps the gruel smooth and evenly thickened.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, wine):

  1. Thymefits better
  2. Cinnamonfits better
