Scalloped Clams

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the shells

  1. Ask the dealer to open the first dozen clams, keeping the shells intact.

  2. Clean the shells well.

Fill the shells

  1. Place 2 soft clams on each half shell.

  2. Add a dash of white pepper to each shell.

  3. Add ½ teaspoon of minced celery to each shell.

  4. Cut the bacon into small dice.

  5. Add 4 pieces of bacon to each shell.

  6. Strew a thin layer of cracker dust over the top of each shell.

  7. Place a piece of butter on each shell.

Bake

  1. Bake in a 400°F (200°C) oven until brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soft clams
Provide the main body of each shell, becoming tender and juicy when heated.
Bacon
Adds fat and savory flavor that bastes the clams as it renders.
Cracker dust
Forms a crumb topping that browns in the oven and adds texture.
Butter
Adds fat that melts over the topping, promoting browning and richness.

The step that matters

Bake until brown. Baking only until the topping browns keeps the clams tender, since overcooked clam muscle becomes tough and rubbery.

Swap the white pepper

How well each one fits the dish's main ingredients (clam, celery, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Pepperfits better
  4. White pepperthe original

Fit is the average pairing score against clam, celery, butter. Candidates are from the same food group and used in at least 100 recipes.
