Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Boil the potatoes whole with skins on in salted water until just tender.

  2. Let the boiled potatoes cool.

  3. Peel the skins off the potatoes.

  4. Slice the potatoes into ¼‑inch thick slices, then chop the slices into small square pieces.

  5. Season the chopped pieces with salt and pepper.

Make the butter and milk sauce

  1. In a saucepan, melt the butter over medium heat.

  2. Add the milk and bring to a boil.

  3. Add the chopped potatoes to the boiling milk.

  4. Stir gently to moisten the potatoes.

  5. Cover the saucepan.

Warm and serve

  1. Place on low heat or in a 350°F (175°C) oven to heat through gradually.

  2. Stir carefully from the bottom.

  3. Cover tightly again until ready to serve.

What each ingredient does

Potatoes
Provide the starchy body of the dish, soaking up the butter and milk as they warm.
Butter
Adds richness and a silky mouthfeel, carrying flavour through the dish.
Milk
Forms the moist, creamy liquid that coats and softens the potato pieces.

The step that matters

Bringing the milk to a boil, then adding the potatoes. Milk scorches and can curdle or form a skin if it boils hard or sits over high heat, so keep the heat moderate and stir. Gentle warming after the potatoes go in lets starch absorb liquid evenly without breaking the pieces apart.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, egg, milk):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against pepper, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
