Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the main body of the dish, cooking to tender inside a crisp coating.
All-purpose flour
Thickens the batter into a paste that clings to the cauliflower and crisps when fried.
Egg yolks
Add richness and help the batter bind and brown evenly.
Egg whites
Whipped until stiff, they lighten the batter so the coating stays airy and crisp.

The step that matters

Fry in hot oil until golden brown. If the oil is not hot enough, the batter absorbs oil and turns greasy instead of crisp. Too hot and the coating browns before the cauliflower heats through. Steady heat gives a crisp, evenly cooked coating.

Swap the cauliflower

How well each one fits the dish's main ingredients (flour, egg):

  1. Arrowrootfits better
