Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce and carries the other ingredients.
Flour
Thickens the cream as it heats, giving the sauce body.
Rich cream
Adds fat and richness, making the sauce smooth and creamy.
Egg
Enriches the sauce and adds body when stirred in off the heat.
Butter
Adds fat and flavour to the sauce.

The step that matters

Stir in the beaten egg off the heat. Egg proteins set at higher temperatures, so adding it to a boiling sauce can scramble it. Removing the pan from the heat first lets the egg enrich the sauce smoothly.
