Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the cake and custard
Bake a white sponge cake in narrow, shallow pans.
Wet the saucepan with cold water to prevent burning, then pour out the water.
Add 1 quart of milk and boil.
Cool slightly.
Beat the yolks of 6 eggs with 3 ounces of sugar and ¼ teaspoon salt, and mix thoroughly.
Add the lukewarm milk and stir the mixture.
Pour the mixture into a double boiler.
Stir until it thickens to a cream consistency without boiling.
Strain the custard.
When almost cold, add 2 teaspoons of vanilla.
Assemble and bake
Arrange the sponge cake slices around the sides and bottom of a glass dish.
Pour the custard over it.
Beat 4 egg whites until light, add 4 tablespoons of sugar and flavor with lemon or vanilla.
Spread the meringue over the custard.
Brown slightly in a 350°F (175°C) oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sponge cake
- Forms the base layer that the custard is poured over, giving the dessert its structure.
- Egg yolks
- Thicken the custard as they set with gentle heat, giving it a creamy texture.
- Milk
- Forms the liquid base of the custard, which thickens as the egg proteins set.
- Egg whites
- Whipped into a foam that forms the meringue topping, which browns in the oven.
- Sugar
- Sweetens the custard and meringue and helps the whipped egg whites hold their foam.
The step that matters
Stir the custard without boiling. Egg yolks thicken through gentle heat, but if the custard boils they can scramble and curdle, leaving it grainy and thin. A double boiler keeps the heat low and even.
