Fruit Cream

Ingredients

Directions

Make the custard

  1. In a saucepan, combine cream, powdered sugar, and eggs. Stir constantly over heat until just boiling, then remove from heat.

  2. Continue stirring until the mixture is nearly cold. Add vanilla extract and mix well.

Freeze and add fruit

  1. Pour the mixture into a freezer. When half frozen, add the preserved fruits, cut into small pieces, and mix thoroughly.

  2. If desired, dissolve carmine in a teaspoon of water and add spirits of ammonia. Mix in for a marbled effect before fully freezing.

What each ingredient does

Eggs
Egg proteins thicken the cream mixture into a rich custard as it heats.
Rich cream
Milkfat gives the frozen dessert a smooth, rich, creamy texture.
Powdered sugar
Sugar adds sweetness and keeps the frozen mixture softer and smoother.
Preserved fruits
Pieces of fruit add flavor, chew and bright fruitiness to the frozen cream.

The step that matters

Heat the custard only until just boiling. Egg proteins set when overheated, so stirring constantly and removing the pan at the first boil keeps the custard smooth rather than scrambled or grainy.

Swap the pineapple
