Why it works: Cinnamon and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Plain Bread Pudding, Baked
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
In a bowl, combine boiling milk and butter. Cover and let it cool.
Once cool, mash the mixture until fine.
Stir in cinnamon, nutmeg, sugar, and baking soda dissolved in a little hot water.
Beat the eggs until light and fluffy, then add to the mixture.
Pour into a well-buttered pudding dish and bake at 350°F (175°C) for 45 minutes.
Serve warm with hard sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
