What each ingredient does

Cornstarch
Thickens the milk into a smooth, sliceable custard when heated.
Egg yolks
Add richness and help set the custard as it thickens.
Sugar
Sweetens the pudding and balances the tartness of the lemon.
Milk
Forms the liquid base of the custard.
Lemon juice
Provides the acidity and bright lemon flavor.
Butter
Adds richness and a smooth mouthfeel to the custard.

The step that matters

Stir constantly for 5 minutes. Cornstarch must be stirred continuously while the milk heats, or it can clump and scorch on the bottom. Once it reaches a boil and thickens, the starch gelatinizes and the custard sets smoothly.
