What each ingredient does

Tongue
The main ingredient, whose long gentle simmer makes the meat tender.

The step that matters

Simmer without boiling. A rolling boil toughens meat proteins and can break the tongue apart, while a gentle simmer lets the connective tissue soften slowly into tender meat.
