What each ingredient does

Citron
Forms the bulk of the preserve and becomes tender and translucent when boiled and syruped.
Baking soda
Alkaline agent that helps the citron soften during boiling.
Alum
Firms the citron's tissue so it holds its shape during long cooking.
Lemons
Add acidity that brightens the sweet syrup and balances the flavour.
Green ginger
Adds a warm, aromatic spiciness to the preserve.

The step that matters

Boil until very tender, adding baking soda and alum halfway through. Cooking too briefly leaves the citron tough, while overcooking breaks it down. Alum helps the peel hold its firmness during the long boil, so the pieces stay intact rather than turning mushy.

Swap the walnut

Fit is the average pairing score against lemon, ginger, syrup. Candidates are from the same food group and used in at least 100 recipes.
