What each ingredient does

Sour milk
Its acidity causes the milk proteins to curdle, separating solid curd from liquid whey.
Milk or cream
Adds moisture and richness, loosening the mashed curd into a softer texture.

The step that matters

Drain the curd until the whey is fully removed. Whey left in the curd makes it watery and sour-tasting and shortens its keeping quality. Draining fully gives a firmer, drier curd that holds its texture when mashed and seasoned.
