What each ingredient does

Salt codfish
Provides the main savoury flavour and the flaky body of the dish.
Eggs
Bind the mixture and set during baking to hold it together.
Mashed potatoes
Add bulk and a soft, creamy texture to the mixture.
Milk
Adds moisture and richness, keeping the mixture soft as it bakes.
Butter
Adds fat for richness and helps the top brown during baking.

The step that matters

Soak and clean the codfish thoroughly. Salt cod is heavily salted for preservation, so it must be soaked long enough to draw out excess salt. Otherwise the finished dish will taste overly salty and harsh.

Swap the potato

How well each one fits the dish's main ingredients (milk, egg, butter, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against milk, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
