Oyster Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Layer the first half

  1. In a deep pan, layer half of the oysters and half of the butter cut into small pieces.

  2. Slice 2 hard-boiled eggs and add them to the pan.

  3. Season with salt and pepper, then add ½ pint of water.

  4. Sprinkle with flour and cover with pie crust.

Layer the second half and bake

  1. Repeat the layering with the remaining oysters, butter, eggs, and water.

  2. Top with another layer of pie crust and bake until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
They are the main filling and release their liquor, which moistens the pie.
Butter
Butter adds richness and moisture to the layers as it melts during baking.
Hard-boiled eggs
Sliced hard-boiled eggs add firm texture and body to the filling.
Flour
Flour sprinkled over the layers helps thicken the liquid into a light sauce.
