Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine bread crumbs, egg yolks, milk, lemon rind, sugar, and butter. Mix well and ensure the mixture is not watery.

Make the topping

  1. In another bowl, whip the egg whites with 1 cup sugar until stiff. Add lemon juice to the whipped egg whites and mix gently.

Assemble and bake

  1. Spread a layer of jelly over the pudding mixture. Top with the whipped egg whites. Bake in the oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine bread crumbs
Form the body of the pudding and soak up the milk and yolks.
Egg yolks
Enrich the custard and help bind the pudding together.
Milk
Provides the liquid that softens the crumbs and sets into a custard.
Egg whites
Whipped with sugar to form a stiff meringue topping that browns in the oven.
Sugar
Sweetens the pudding and helps the whipped egg whites hold their structure.

The step that matters

Check that the mixture is not watery before topping. Excess liquid in the crumb and milk base keeps the pudding from setting firmly and can make the meringue weep or slide off.

Swap the lemon
