Old Fashioned Molasses Candy

Ingredients

Directions

Make the candy

  1. In a vessel holding at least 8 gallons, combine molasses and water.

  2. Boil moderately while stirring briskly.

  3. Test the mixture in water; it's done when it cracks and doesn't stick to teeth.

  4. Just before removing from heat, stir in the butter.

Shape and finish

  1. Pour onto greased plates and cool quickly.

  2. Pull the candy until stiff, adding lemon or vanilla flavoring during this process.

What each ingredient does

Molasses
Provides the main body, dark color and sweet, slightly bitter flavor of the candy.
Butter
Adds fat that softens the texture and gives the pulled candy a smoother bite.

The step that matters

Testing the cracking stage in water. Cooking molasses too little leaves a sticky, soft candy, while cooking too long makes it hard and brittle. The water test shows when enough moisture has boiled off to set firm and crack cleanly.
