Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Form the bulk of the paste, giving the dressing its body and soft, starchy texture.
Boiled rice
Adds bulk and light texture, absorbing moisture so the dressing holds together.
Melted butter
Adds fat and richness, coating the other ingredients for a softer, smoother mouthfeel.
Powdered soda crackers
Help bind the mixture and add a little starch to firm it for shaping.
Peanut butter
Contributes fat and a nutty flavour that complements the chestnuts.

The step that matters

Dry the boiled rice. The record calls for very dry rice. Wet rice adds excess moisture, which makes the mixture soggy and hard to shape, and the starch in the chestnuts and crackers can only bind so much water.

Swap the celery

How well each one fits the dish's main ingredients (chestnut, rice, peanut, butter, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Turmericfits better
  4. Celerythe original

Fit is the average pairing score against chestnut, rice, peanut, butter, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
