Grape Jelly

Ingredients

Directions

  1. Boil grape juice for 20 minutes to evaporate water.

  2. Add ½ pound sugar to the juice.

  3. Boil gently for 5 minutes or until it congeals when cold.

  4. To test for jelly, dip a spoon into the liquid, hold it up, and let it drop; the last drop should stay on the spoon.

  5. Pour into sterilized glasses.

What each ingredient does

Grape juice
Provides the liquid and fruit flavour that the jelly is built from.
Sugar
Sweetens the jelly and helps it set when boiled with the juice.

The step that matters

Judging when the jelly is done. Boiling evaporates water and concentrates sugar and natural pectin. Cooking too briefly leaves the jelly runny, while cooking too long can make it stiff. The cold-spoon test shows whether it will set.
