Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
Wipe the beef with a cloth dampened in cold water and place it on a rack in a dripping pan.
Dredge the beef with flour.
Sear the beef in the hot oven for about 15 minutes.
Reduce the heat to 300°F (150°C) and bake slowly until done, basting every 10 minutes.
If the flour starts to burn, add a little water.
For a rib roast, serve it standing on the ribs and cut slices in line with the rib.
For a rolled roast, serve with the cut side up and slice horizontally.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
