Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they add airy lightness to the frozen texture.
Gelatin
Helps bind the liquid so the frozen mixture stays smoother and less icy.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice softer.

The step that matters

Freezing while stirring constantly. Stirring breaks up ice crystals as they form, keeping the texture fine and smooth rather than coarse and icy. Stopping early lets larger crystals grow.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, gelatin, egg, orange, peach, pineapple, raspberry):

  1. Vanillafits better
  2. Apricotfits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, gelatin, egg, orange, peach, pineapple, raspberry. Candidates are from the same food group and used in at least 100 recipes.
