Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and 27,047 recipes mention both. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Pickled Oysters

Ingredients

Directions

Poach the oysters

  1. Remove the oysters from their liquor and add an equal amount of water.

  2. Place them over heat with salt to taste and skim the surface.

  3. Once boiling, remove from heat.

Make the pickle

  1. In a pan, combine vinegar, allspice, whole peppercorns, cayenne, mace, and ground pepper.

  2. Pickle the oysters a day before serving.

  3. If scum forms after a few hours, remove the oysters and strain the liquid.

  4. About six hours before serving, slice the lemon and add it to the oysters.

What each ingredient does

Oysters
Are the main ingredient, poached briefly so they firm up before pickling.
Vinegar
Provides the acidity that preserves and sharpens the flavour of the pickle.
Lemon
Adds bright acidity and aroma to the pickled oysters.
Allspice
Contributes warm, aromatic flavour to the pickling liquid.

The step that matters

Skimming the surface while the oysters heat. Scum rising from the oysters during heating is impurities and proteins; skimming it keeps the liquid clear and the flavour clean. Removing the oysters once boiling prevents them from toughening, since overcooked oysters become rubbery.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (oyster, vinegar, allspice, pepper, lemon):

  1. Marjorambetter flavor fit
  2. Thymebetter flavor fit
  3. Parsleybetter flavor fit
  4. Macethe original

Fit is the average pairing score against oyster, vinegar, allspice, pepper, lemon. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
