Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Its fat forms the network of air bubbles that gives whipped cream its body.
Powdered sugar
Sweetens the cream and helps stabilize the whipped foam.
Lemon zest
Adds aromatic citrus oil and flavor to the cream.

The step that matters

Whisking until frothy, then draining. Over-whisking pushes the cream past its peak, turning it grainy and eventually into butter. Draining the liquid that separates from the froth and whisking it back keeps the texture even.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (cream, sugar, lemon):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits about as well
  4. Limefits less well

Fit is the average pairing score against cream, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
