Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Starch that thickens the liquid as it heats, setting it into a clear, glossy jelly.
Sugar
Adds sweetness and balances the mild, starchy flavour of the jelly.
Lemon peel
Infuses the boiling water with citrus aroma before it is removed.

The step that matters

Pour the arrowroot into boiling water. Arrowroot starch thickens sharply once it reaches a boil. The dissolved starch needs to meet boiling liquid and cook briefly to set properly; if the liquid is not hot enough, the jelly stays thin and cloudy.

Swap the nutmeg

How well each one fits the dish's main ingredients (arrowroot, lemon, sugar):

  1. Cinnamonfits better
  2. Turmericfits better
  3. Capersfits better
  4. Nutmegthe original

Fit is the average pairing score against arrowroot, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
