Preserved Peaches

Ingredients

Directions

Prepare the fruit

  1. Cut each peach longitudinally to the stone and twist to remove the stone.

  2. Peel and weigh the peaches.

  3. For each pound of fruit, weigh out a pound of sugar and add ½ cup of water.

  4. Dissolve the sugar completely before heating.

Make the syrup

  1. Add the egg white or dissolved isinglass to the syrup.

  2. Bring the syrup to a boil and skim off any scum.

  3. Remove the syrup from heat and wash the kettle to prevent scum from boiling into the fruit.

  4. Return the syrup to the kettle, add the peaches, and boil for about 1 hour and 15 minutes until translucent.

Pack and finish

  1. Carefully remove the peaches and place them on dishes.

  2. Let the syrup cool until lukewarm, then pour it over the peaches in jars.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
The fruit itself; it becomes translucent and tender as it cooks in the syrup.
Sugar
Sweetens the fruit and, at high concentration in syrup, helps preserve it.
Egg white or isinglass
Clarifies the syrup, binding scum so it can be skimmed off for a clear result.

The step that matters

Skim the syrup and wash the kettle. Scum left in the syrup can boil back onto the fruit and cloud both the syrup and the peaches. Removing it fully keeps the preserve clear.

Swap the peach

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Peachthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
