Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flank or round steak
Provides the meat that forms the body and beefy flavour of the patties.
Onion
Adds moisture and a sweet, aromatic flavour to the minced meat.
Butter and lard
Fat for frying that carries heat evenly and promotes browning on the patty surface.

The step that matters

Fry the patties until browned. The pan must be very hot before the patties go in. Hot fat sears the surface quickly, creating browning and flavour while keeping the inside juicier than slow cooking would.
