What each ingredient does

Tart apples
Provide the main body and pectin that thicken the sauce as it cooks.
Sugar
Adds sweetness and helps balance the sharpness of the vinegar and apples.
Vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Onions
Add savory depth and aroma to the sauce as they soften and cook down.

The step that matters

Boil for one hour. The long boil must reduce the sieved apple mixture to a thick, spreadable consistency. Too little cooking leaves it thin and watery, and it may spoil sooner in the bottle.

Swap the onion

How well each one fits the dish's main ingredients (apple, sugar, pepper, clove, mustard, cinnamon, vinegar):
