Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Boil the potatoes whole with skins on in plenty of salted water until just tender.

  2. Remove the skins from the boiled potatoes.

  3. Slice the potatoes into ¼‑inch thick slices, then chop the slices in one direction and turn the bowl and chop across to create small dice‑sized pieces.

Warm and serve

  1. Melt the butter over medium heat in a saucepan.

  2. Add the milk to the melted butter and bring to a boil.

  3. Add the chopped potatoes to the boiling milk and stir gently to moisten the potatoes.

  4. Cover the pot and reduce heat to low, or place in a 350°F (175°C) oven.

  5. Heat the potatoes through gradually, stirring from the bottom before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish and absorb the milk and butter, giving a soft, moist texture.
Butter
Adds richness and fat, giving the potatoes a smoother, more savoury flavour.
Rich sweet milk
Supplies liquid and creaminess that the potatoes absorb as they heat through.

The step that matters

Heat the potatoes through gradually. Milk scorches and can curdle or stick if it boils hard or heats unevenly, so low heat and frequent stirring from the bottom keep the sauce smooth.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, egg, milk):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against pepper, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
