What each ingredient does

Cold boiled potatoes
Form the bulk of the dish and crisp lightly on contact with hot fat.
Butter or drippings
Conducts heat and adds richness, helping the potatoes brown and carry flavor.
Onion
Adds sweetness and savory depth as it softens and colors in the fat.

The step that matters

Cook for about 5 minutes without browning the potatoes. Stirring gently and keeping the heat moderate lets the potato surfaces warm and crisp slightly without burning. Excess browning from high heat or constant stirring can scorch the fat and taste bitter.

Swap the onion

How well each one fits the dish's main ingredients (potato, butter, pepper, parsley):

  1. Carrotfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Onionthe original
