Strawberry Short-cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Prepare baking powder biscuit dough with extra shortening.

  2. Divide the dough in half.

  3. Roll each piece to fit a biscuit tin or large pie tin.

Assemble and bake

  1. Spread soft butter on the bottom crust.

  2. Place the top crust on it.

  3. Repeat with the second half of the dough.

  4. Bake in a 400°F (200°C) oven until golden.

Serve

  1. Once baked, separate the layers where the butter was spread.

  2. Place the bottom crusts on plates.

  3. Cover with prepared strawberries.

  4. Pour any remaining juice around the cake.

  5. Serve with sweet cream.

What each ingredient does

Baking powder biscuit dough
Forms the tender, layered crusts that hold the berries and cream.
Soft butter
Spread between the crusts, it separates the layers and adds richness.
Strawberries
Provide sweetness and acidity, and their juice moistens the crusts.
Sweet cream
Adds richness and cooling contrast to the warm, tart berries.
