Why it works: Apricot and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 3,630 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Apricot Meringue Pie
Ingredients
Directions
The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 350°F (175°C).
Make and bake the filling
Mix the chopped apricots, ½ cup sugar, and egg yolk in a bowl.
Fill the pie crust with the apricot mixture and bake until set.
Remove from the oven and let it stand for 2-3 minutes.
Top with meringue and bake
Whip the egg white until stiff, then gradually add 2 teaspoons sugar to make meringue.
Spread the meringue over the pie and return it to the oven.
Bake until the meringue is golden brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apricots
- Provide the main fruit flavor and body of the filling.
- Egg yolk
- Thickens the apricot filling as it bakes and sets.
- Egg white
- Whipped into foam to form the airy structure of the meringue.
- Sugar
- Sweetens the filling and stabilizes the whipped egg white meringue.
The step that matters
Whip the egg white until stiff. Egg white must be whipped to stiff peaks with sugar added gradually so the foam holds its shape and bakes into a stable, airy meringue. Under-whipped or greasy whites will weep or collapse.
