Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the mincemeat and, once cooked, its soft, moist body.
Sugar
Sweetens the mixture and draws moisture out of the tomatoes, helping them soften and thicken.
Seedless raisins
Add concentrated sweetness and chewy texture to the cooked mixture.

The step that matters

Cook the mixture until the tomatoes are soft. Sugar and heat must work together to soften the tomatoes and thicken the mixture. Stopping too early leaves firm pieces and a thin, watery filling that may not keep well in sealed jars.

Swap the tomato

How well each one fits the dish's main ingredients (sugar, raisin, mace, cinnamon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Capsicumfits better
  4. Tomatothe original

Fit is the average pairing score against sugar, raisin, mace, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
