What each ingredient does

Cucumbers
Form the bulk of the pickle, providing crisp texture once squeezed of excess water.
Onions
Add pungency and savoury sweetness that mellows during pickling.
Sugar
Balances the sharpness of the vinegar and adds sweetness.
Vinegar
Provides acidity that preserves the pickle and gives it its tang.

The step that matters

Squeezing out the water. Cucumbers and onions are mostly water. Removing it before adding vinegar keeps the pickle crisp and stops the jars from being diluted and watery.
