Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and are the centrepiece of each fritter.
Eggs
Whisked light, they bind the batter and give the fritters structure as they set.
Fine sifted flour
Thickens the batter with milk and eggs so it holds its shape in the fat.
Rich milk
Adds moisture and richness to the batter, helping it cook tender inside.
Lard or butter
Frying fat that gives the outside a golden brown crust and rich flavour.

The step that matters

Heat the fat until frothy before dropping in the batter. If the fat is not hot enough, the batter absorbs it and becomes greasy instead of crisping. Hot fat sets the outside quickly and browns it evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (oyster, egg, flour, milk, butter):

  1. Nutmegthe original
  2. Capersfits about as well
  3. Cinnamonfits less well
  4. Parsleyfits less well

Fit is the average pairing score against oyster, egg, flour, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
